Coconut and Lime Rice Pudding

Posted by Dr. Cason on Wednesday, June 4th, 2008

Hi Everyone!

I’ve chosen the next recipe from Coconut & Lime! If you haven’t checked out the only food blog that features 100% original recipes, then you must drop what you’re doing and go right over!

In celebration of Coconut & Lime’s 4 year blogiversary Rachel Rappaport is holding a contest. Now I had a lot to peruse from but I chose an earlier recipe that featured her blog’s name in the title. I also chose it because I live on an island (Guam) and there is a lot of coconut! It’s a good way to incorporate some local flavor to my table.

Rice Pudding ingredients

Here are the ingredients:

1/3 Cup 1/3 cup white basmati rice
14 oz can coconut milk (not cream of coconut)
1 1/2 cups milk
1/3 cup sugar
2 teaspoons lime zest*
1/8 teaspoon salt
1 lime, quartered (optional)

Lime

Ms. Rappaport said the lime was optional but look how pretty it is. You can’t resist.

Directions:
In a small bowl soak rice in about 2/3 cup of cold water for 30 minutes. Drain rice. In a medium sized saucepan bring coconut milk, milk, rice, sugar, and salt to a boil, Reduce heat to low and simmer, for about 40-45 minutes, stirring occasionally. It should have cooked down to a thick, creamy texture. Remove from heat and stir in lime zest. Serve with lime wedges. Delicious warm or chilled.

Enjoy! It really was delicious. I particularly loved the lime at the end. I squeezed a little of it over the warm pudding. Delightful. I’m sure it might have tasted good cold but we didn’t have any left over!

Looks good huh? What do you all think? Do you like rice pudding?

That sounds so good. I lived in Hawaii for several years and it sounds like something we would have eaten there. I’ll have to try this recipe….I’ve been missing that kind of food.

Yes I know what you mean by “that kind of food”. Comforting! I’d never really made it before. Soooo good! Again it was the lime that really made it. Squeeze it over the warm pudding!
