Guacamole

Here is my very simple version of guacamole.
2 ripe avocados.
1 tomato finely chopped
1 small handful of cilantro also finely chopped
2 small green onions chopped finely
Salt and pepper
Lime
Smash up the avocados until smooth and then add the other ingredients. Season with salt and pepper. Squeeze a little lime to keep the guacamole from turning and flavor it nicely to your taste.
Make sure you choose good avocados, preferably Haas- they taste better. They should be firm to touch but yield under gentle pressure. If you take the little stem off the tip of the avocado, the flesh underneath should be green. If it’s discolored it’s overripe and not what you want! Also another tip- don’t blend. It turns everything into a puree and definitely ruins the texture.
Don’t get caught up in the specific measurements. It’s not what matters. Just start mixing and seasoning to taste. My husband loves chili powder and/or Tabasco but I usually leave it out so the kids can enjoy it as well!
Now all you have to do is crack open a beer and grab some chips! Enjoy!

Keep trying! My husband never liked avocados when I met him and I was like, Saaaay whaaaat Crazy Man? and I just kept making it. If you serve it before dinner when he’s really hungry then he’s more apt to try it! Then poof! One day he’s asking you to make it!
