Strawberry Apple Salad#2

The first time I had strawberries in my salad was at my favorite little mom and pop Italian restaurant in LA.  I was first surprised to bite into a little sweetness but it soon became a favorite and I went back again and again to sample it. Sadly a family illness a year later closed the restaurant down. I miss that couple and the cozy little restaurant but I thank them for pushing me to experiment!

So for an easy healthy alternative try adding a little fruit with your salad greens. Toss in a little apple, strawberry or mango. But remember to use a light salad dressing. Something heavy is going to overwhelm the delicate flavors. I always make up my own Italian dressing and mix it in lightly.

Serve with some crusty bread and a glass of wine. Mmmm….

    There’s a similar salad at one of my favorite sandwich shops. It also has blue cheese crumbles and sugared walnuts…YUM!!

    We like to add dried cranberries, feta and cilantro as well as toasted almonds! With a dressing of equal parts vinegar, virgin olive oil and sugar….yumm!

    Guin- Oh wow that sounds good! I’ve been doing more fruit too because we can’t serve milk or nut products. If we could then that would be my next try!

    Nikki- Sugar?? Equal parts? Isn’t it too sweet?

    Yes it is a little sweet but soooooooooo tasty. It’s pretty much the only way I can get my husband to eat “rabbit food”

    Nikki- Mine was like that too but gradually he has eats it more than I do!
