Tater Tot “Potato Gem” Casserole

To continue the tater theme here’s a recipe from my twin!
I made it right before my son’s very last asthma flare in June. We have since found out that he is allergic to milk. I try not to think too hard at the fact that I may have thrown him into an attack with this recipe!
Tater Tot Casserole: Embarrassingly simple, but tasty.
1 pound of ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1 can (11 1/8 oz) condensed Italian tomato soup, undiluted
1 jar (4 1/2 oz) sliced mushrooms, drained
2 cups shredded part-skim mozzarella cheese
1 package (32 oz) frozen tater tots
In a skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink and vegetables are tender, drain. Add soup and mushrooms.
Transfer to a greased 13 in x 9 in x 2 in baking dish. Top with cheese and potatoes.
Bake, uncovered at 400 degrees for 30-35 minutes or until golden brown. Yields: 6-8 servings. (Note - I could not find condensed Italian soup in my grocery store, so I just used regular tomato soup and then added Italian seasoning. Also, add some salt.)

Awesome- You’re right. Sausage would taste really good!
Kyla- I think substitution would work really well. Now that my son can’t eat dairy I think I’m going to use the sausage like Awesome Mom suggested and eliminate the cheese. I’ll get it good and crispy on the top too!

Barbara- I never was either but somehow just recently it’s made it to our table more and more!
