Garlic and Ginger Mashed Potatoes

4-5 peeled and cubed potatoes
2 cloves of minced garlic
1 tablespoon minced fresh ginger
Low sodium chicken broth
Boil and mash your potatoes first and then set aside. Saute  garlic and ginger in 1-2 tablespoons of olive oil until lightly cooked. Stir the oil mixture in and add the broth until you reach the desired consistency.

Guacamole

Here is my very simple version of guacamole.
2 ripe avocados.
1 tomato finely chopped
1 small handful of cilantro also finely chopped
2 small green onions chopped finely
Salt and pepper
Lime

Banana and Peach Smoothie

You could also call this a peach and banana milkshake but I love the way smooooothie rolls off the tongue of my two year old.
